Experience Shannon’s ultimate plant-based take on classic American diner staples. Juicy burgers, crunchy, fluffy fries, creamy mac & cheese and jelly donuts—all crafted with Shannon’s signature focus on big, unapologetic flavours.

Post (or pre) feast, glide onto the roller rink—an airline-themed fantasy complete with a grounded mail plane turned DJ booth—and skate to vinyl-only beats spun by local selectors. Whether you’re a seasoned skater or a total newbie, the rink welcomes everyone—plus, it’s fully accessible for wheelchairs and mobility aids.

Thirsty? The Trolley’d bar is shaking up zero-waste, foraged cocktails and retro milkshakes, using ethically sourced ingredients and native botanicals—expect sips like lemon myrtle margaritas and Illawarra plum sours.
