Mark, a Bundjalung man with more than 30 years of cooking experience, will bring his trademark charm and knowledge – as seen on TV shows The Outback Cafe, The Chefs Line and On Country Kitchen – to each and every plate. Expect to be dazzled on multiple fronts, as Mark explains the nutritional and medicinal properties behind the native ingredients he uses, honouring millennia of Indigenous tradition with a thought-out dégustation.

Enjoy a welcome cocktail upon arrival, followed by a welcome reception from Mark, who will talk through the menu’s inspiration ahead of the five-course feast, paired with either award-winning premium Tyrell’s wines, Young Henrys beers or non-alcoholic options.
