Chef, author and leading voice in Australia’s culinary scene, Peter Gilmore is the executive chef at two of Australia’s most exciting restaurants, Sydney's Bennelong and Quay. Peter’s cuisine is inspired by nature, and he was one of the first chefs in Australia to embrace heirloom varieties of vegetables. Peter is also one of the most awarded chefs in Australia, with Quay winning Three Chefs Hats for an unprecedented 18 years in a row.

Each night of the festival, Aurorae at Bennelong Bar will present a symphony of flavours and sounds against the backdrop of the Light Walk’s glow.

Under the stewardship of Peter Gilmore, elevate your sensory experience with a bespoke bar snack and cocktail offering crafted to match Vivid’s brilliance. Plus, live music will further set the mood on Monday, Tuesday, and Thursday nights from 8-11pm. 

Nestled in what The New York Times hails as the “holy grail of Australian restaurants,” this exclusive event not only promises an unrivalled viewpoint of the city's lights but also an opportunity to experience the best of Australian hospitality. 

Aurorae at Bennelong Bar will take place every night of Vivid Sydney (excl Wed 29 May) offering a limited-edition snack and cocktail offering by Executive Chef Peter Gilmore. Plus, live music from 8pm – 11pm on Mondays, Tuesdays and Thursdays.
